Its a rare moment when we can all wake up together as a family on the weekend. Will travels a lot for work on the weekends so we leap at the opportunity to have a Sunday together! And when you have weather like we did on the weekend its pretty hard not to enjoy it.
Brunch, Papers, Mimosas + Sunshine - all the ingredients for a perfect Sunday.
We decided to do some corn fritters and bacon! Whats so good about them is that most kids love em! And you can make a batch for them and freeze them for the week for lunches.
Makes 5-6 Corn Fritters
Ingredients:
- 100g plain flour
- 1tsp of baking powder
- 1 medium egg
- seasoning
- chopped coriander/or parsley
- 198g can of corn kernels
- 150 milk (buttermilk works really well too)
- Sift the flour, baking powder and seasoning into a large bowl. Make a well in the centre, add a medium egg and gradually beat in 150 milk to form a smooth batter.
- Drain a 198g can sweetcorn kernels, pat dry on kitchen towel, then add to the batter mix with any thing else you fancy like chopped herbs, chorizo, anything.
- In a frying pan, add a tablespoon of coconut oil or a little butter. Once hot, fry spoonfuls of mixture for about 2 mins each side until golden and crisp on each side.
- Serve with bacon, avocado, salad and some homemade salsa.
- and don't forget the mimosas. very important addition.
