This is a popular little treat that I keep in the fridge and have now started making these pretty religiously. They are great to keep in the fridge for those afternoon slumps when you need a little sugar hit. They are delicious with a cup of tea and whats best is you don't have to feel guilty for having them. Also , I would just like to add that I sometimes use these as a bargaining tool to get Henry to finish all his veggies.
Raw Chocolate Balls
400g Pecans
400g Medjool Dates, pitted
3 Large Tablespoons of Raw Cacao powder
200g of chopped Almonds
100g of dessicated coconut
1 tsp Coconut oil
optional sweetener: maple syrup/agave syrup/honey ( if adding agave syrup do a smaller amount first to taste as it can be a little on the sweet side.
Pulse your pecans and almonds in a food processor until crumbly and fine. Not too fine, you want some little bits in there. Then add the dates, cacao powder coconut oil and dessicated coconut, and optional sweetener.
Blend until you get a good sticky mixture that is a bit more like a playdough texture.
Roll into balls and dip into maple syrup and roll them in chosen toppings. I used some chopped nuts, cacao powder and dessicated coconut.
Pop them in the freezer to set for a couple of hours and keep in the fridge in an airtight container.
Now grab a cuppa tea and find a little spot to indulge on some healthy naughty treats.
